Ingredients:
2 tablespoons olive oil 4 oz Miller ham, cut into small pieces 1 small shallot, finely chopped 2 cloves garlic, finely chopped 1/3 cup dry white wine 2 eggs, room temperature ¼ cup shredded parmesan cheese ½ cup shredded fontina cheese ~ 6 oz spaghetti, fettuccine or linguine salt and pepper chopped parsley for garnish
Directions: Heat oil in frying pan and add chopped ham. Cook over medium heat until just crispy. Add shallots and sauté a few minutes. Add garlic, and sauté about 1 minute. Add white wine and cook until reduced by about half. Break eggs into a warmed bowl large enough to hold everything. Add the cheeses and mix well. Cook pasta and drain. Add the hot pasta to the egg and cheese mixture and toss well to coat the pasta. Add the ham mixture and any sauce in the pan. Season with salt and pepper, and toss again to mix. Garnish with chopped parsley. CONTAINS PARTIALLY COOKED EGGS
